What is Anaerobic Fermentation?

Anaerobic fermentation refers to fermentation that occurs in an oxygen-free environment. This process is carried out by placing the coffee beans in airtight tanks that allow the escape of gases but not the entry of oxygen. The lack of oxygen creates an environment in which certain microorganisms thrive, influencing the development of coffee flavors.

The Process in Detail

1. Selection of Beans: High quality coffee beans are selected.
2. Fermentation in Sealed Tanks: The grains are placed in sealed tanks to start the anaerobic process. This process can take anywhere from 24 hours to several days, depending on the desired flavor profile.
3. Monitoring and Control: During fermentation, factors such as temperature and pressure are controlled to ensure an optimal environment for microorganisms.
4. Drying and Roasting: After fermentation, the beans are dried and subsequently roasted, highlighting the unique flavors developed during the anaerobic process.
